Panko Chicken Recipe

With the temperatures getting cooler in Chicagoland, it is great to have a tasty alternative to grilling. This Panko Chicken recipe doesn’t disappoint! My sister, Colby, taught me how to make this – but, she still makes it the best!

ingredients

Chicken breasts halved, length-wise

2 eggs

All Purpose Flour

Lemon

Panko Bread Crumbs

Butter

instructions

  1. Preheat oven to 350 degrees
  2. Line cookie sheet with aluminum foil or parchment paper. Place cooling rack on top.
  3. Put flour, eggs mixed with lemon juice and panko bread crumbs into individual bowls.
  4. Melt butter in pan on medium heat
  5. Dredge chicken breasts in flour, egg and panko (“F E B”- flour, egg, breading) in that order
  6. Brown chicken breasts on each side then place on rack on cookie sheet
  7. Bake for 40 minutes or until cooked through
