This easy crockpot Italian beef recipe came from my sister Colby. It’s one of those simple meals that takes just a few ingredients and turns into something everyone loves.
The chuck roast cooks in the crockpot with ranch seasoning, Italian dressing mix, beer, and giardiniera until it’s tender and easy to shred. Pile the beef onto good buns with melted provolone, and dinner is done.
It’s a perfect slow cooker dinner, great for feeding a group, and it freezes well too.
Ingredients
1 chuck roast
1 packet dry ranch dressing mix
1 packet Italian dressing seasoning (i.e. Good Seasons)
½ can beer
1 jar giardiniera, drained
Optional: 1 packet au jus mix
For serving
Hoagie rolls or good sandwich buns
Provolone cheese (melts nicely)
Instructions
1. Brown the roast in a skillet on both sides.
2. Place the roast in the crockpot.
3. Sprinkle the ranch packet and Italian seasoning packet over the roast.
4. Add the beer and drained giardiniera.
5. Optional: add the au jus packet.
6. Cook on HIGH for about 8 hours until the beef is very tender.
7. Shred the beef and return it to the juices.
Serve
Serve the shredded beef on good buns with melted provolone cheese.
