I finally tried it, using the version from Ree Drummond (aka The Pioneer Woman), and now I get the hype.
It’s one of those meals that feels special without being complicated. Perfect for Valentine’s Day, date night at home, or honestly… any night you want comfort food with a little flair.

Marry Me Chicken

Ingredients
4 boneless, skinless chicken breasts
Kosher salt and black pepper
1/2 cup all purpose flour
2 tablespoons olive oil
6 tablespoons butter
1/2 small yellow onion, finely diced
3 cloves garlic, minced
½ teaspoon red pepper flakes (optional)
2 tablespoons tomato paste
1/2 cup dry white wine
2 cup chicken broth
2/3 cup dry-packed sun-dried tomatoes, sliced
1/2 teaspoon Italian seasoning
1 cup heavy cream
½ cup grated Parmesan cheese
Fresh basil, for garnish
Instructions
01. Sliced each chicken breast in half horizontally into cutlets. Season both sides of the chicken generously with salt and pepper on both sides.
02. Spread the flour in a shallow dish. Working with 1 cutlet at a time, dredge the chicken in flour, shaking gently to remove the excess and transfer to a plate.
03. Heat olive oil and butter in a large skillet over medium heat. Once the foam has subsided, add the first 4 cutlets to the pan, and cook until golden brown, 4-5 minutes per side. Transfer to a clean plate and repeat the process with 2 tablespoons butter, 1 tablespoon oil and the remaining 4 cutlets. (Do not wipe the pan between batches unless flour is burning.). Reduce heat to med-low.
04. In the same skillet, melt the remaining 2 tablespoons butter. Add the onion and cook until translucent, about 2 minutes. Add garlic, red pepper flakes and tomato paste to pan. and cook for about 30 seconds, just until fragrant and tomato paste has turned darker in color, 1 minute. Pour wine in pan to deglaze, scraping up any brown bits. Let the wine reduce by half, about 2 minutes.
05. Pour in the chicken broth and scrape up any browned bits from the pan. Add sun-dried tomatoes and Italian seasoning and bring to a simmer. Once the sauce is simmering, add the chicken and any accumulated juices back into the pan; cook for 5 minutes. (The sauce should be thickened slightly.) Stir in the cream and parmesan and let simmer for 5 minutes more to make sure the chicken is tender and all the flavors have melded.

06. Garnish with fresh basil and serve immediately.

I kept it simple and served this over pasta with a side salad and candlelight. No overthinking it.
